Variety: 70% Sémillon, 20% Sauvignon, 10% Muscadelle.

Fermentation and maturation: Fermentation and maturation in casks for 19 months.

Serving temperature:  between 10° and 12°C.

Tasting:  The colour is brilliant golden yellow with extremely lovely depths. The nose is intense and complex, combining fragrances of candied citrus fruits, quince and vanilla with a pinch of cinnamon that accentuates its floral nuances. The palate is very full, well-bodied and perfectly balanced by its acidity. The sensation of density intensifies as it develops with a bouquet of candied citrus fruits, cream toffees and roasted notes. Very long and absolutely delicious!

    Coup de Cœur in the Hachette Guide 2007 with three stars (exceptional wines category): “What a long way this all but abandoned vineyard has come since it was bought up in 1996! The angels need not doubt: with this vintage, they will certainly be in paradise. With a shimmering gold, almost amber colour, this 2003 wine that still needs to mature is developing a nose with notes of candied fruits, white blossom, apricots and honey. After its rapid and pleasant approach, with notes of exotic and candied fruits, we discover an enormously concentrated palate, well balanced by a marked freshness. An expressive wine that is already enjoyable but that can mature for a decade.”
    Andréas LARSON, designated the World’s Best Sommelier in 2007, identifies this vintage as a “Top Pick Star”, thus placing it among the greatest sweet wines in the world: “Deep golden colour, more developed nose with some roasted notes, hazelnuts, honey, crème brûlée and tropical fruit, the palate is really sweet and unctuous, yet with a good balance, and impeccable length, very fine potential for ageing. Very complex and unctuous nose, intense and complex with a plethora of honey, roasted nuts, dried fruit and crème brûlée, the palate is still young and very rich in its sweetness, nicely enjoyable for its structure and sweetness, although it has a potential of many, many years of ageing. Super intense, keeps developing as well, a bit more developed with lovely sweet fruit, hints of crème brûlée and a long luscious finish, very good, a grand vin…

    Serving suggestions:
    Passionate admirers of sweet wines will enjoy them from the aperitif right through to dessert. Do them justice with a terrine of fresh foie gras or fried foie gras, bass cooked in its skin with a salad of tomatoes and balsamic vinegar, a medallion of veal with mushrooms, duck à l’orange, grilled chicken or guinea fowl glazed with acacia honey and a hint of ginger accompanied by peppers and delicately spiced vegetables, calf sweetbreads in sauce, veined cheeses or even apple pie…
