Variety: 70% Sémillon, 20% Sauvignon, 10% Muscadelle

Fermentation and maturation:  Fermentation and maturation in casks for 26 months.

Serving temperature:  between 10° and 12°C.

Tasting:  Andréas LARSON, designated the World’s Best Sommelier in 2007,  identifies this vintage as a “Top Pick Star”, thus placing it among the greatest sweet wines in the world: “Very rich nose, complex, expressing honey, candied fruits, saffron and apricots, very good density, great extraction and length, succulent with complex roasted notes at the end. Nice and deep golden colour, the nose is very generous with some hints of oak, almond paste, honey and apricots, the palate has an immense sweetness and great concentration, very long finish and good balance already, still it is very young and unreleased, this will need time to come around and gain complexity, excellent material …”

  • Serving suggestions:
    Passionate admirers of sweet wines will enjoy them from the aperitif right through to dessert. Do them justice with a terrine of fresh foie gras or fried foie gras, bass cooked in its skin with a salad of tomatoes and balsamic vinegar, a medallion of veal with mushrooms, duck à l’orange, grilled chicken or guinea fowl glazed with acacia honey and a hint of ginger accompanied by peppers and delicately spiced vegetables, calf sweetbreads in sauce, veined cheeses or even apple pie…
    Andréas LARSON, designated the World’s Best Sommelier in 2007, added the following at his last tasting: “Nice and deep golden colour, the nose is very generous with some hints of oak, almond paste, honey and apricots, the palate has an immense sweetness and great concentration, very long finish and good balance already, still it is very young and unreleased, this will need time to come around and gain complexity, excellent material”…The nose has a lovely intensity, no big difference since last tasting, a plethora of sweet fruit, almond, some oak, honey and ripe citrus, it will take a long time before the youthful sweetness settles, but it is starting to show some complex spicy notes in the background, long, unctuous and very promising. A lovely elixir, just getting better and better, impeccable balance an intense sweetness, viscous and full with lovely fruit, almonds, some roasted notes, vanilla and spices on the very long finish – bloody delicious!”
